Two are most widely accepted: the first explanation has to do with the grape variety, the&nbsp;second with the soils.<br>&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>\u2022 Mature grapes of <span style=\"color:#000\" class=\"color\">Blanc Fum\u00e9<\/span> (synonym of Sauvignon blanc) are covered with a light grey bloom which gives the illusion of a veil of <span style=\"color:#000\" class=\"color\">smoke<\/span>.<br>&nbsp;<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>\u2022 <em><span style=\"color:#000\" class=\"color\">Fum\u00e9<\/span> <\/em>also refers to the unmistakeable <span style=\"color:#000\" class=\"color\">\u201csmokiness\u201d<\/span> developed by the friction of flint rocks which make up the exceptional soil of Pouilly.&nbsp;<\/li><\/ul>\n\n\n\n<p>&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"744\" height=\"820\" src=\"https:\/\/www.pouilly-fume.com\/wp-content\/uploads\/2020\/11\/PF_2400280-2.jpg\" alt=\"\" class=\"wp-image-1950\" srcset=\"https:\/\/www.pouilly-fume.com\/wp-content\/uploads\/2020\/11\/PF_2400280-2.jpg 744w, https:\/\/www.pouilly-fume.com\/wp-content\/uploads\/2020\/11\/PF_2400280-2-272x300.jpg 272w\" sizes=\"auto, (max-width: 744px) 100vw, 744px\" \/><figcaption><span style=\"color:#abbc91\" class=\"color\">Sauvignon<\/span><\/figcaption><\/figure>\n<\/div>\n<\/div>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pouilly sur&nbsp;Loire<\/h2>\n\n\n\n<h2 class=\"subtitle wp-block-heading\">What a name for a wine!<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>The village around which it is produced, Pouilly-sur-Loire, gave its name to this dry wine made from chasselas grapes.<br> In living winemaker memory, chasselas has always been vinified in Pouilly. In its glory days in the nineteenth century, it was a very popular table grape. Benefitting from its connection to the railroad system since 1861, Pouilly provided Paris\u2019 main farmers market \u201cLes Halles de Paris\u201d with countless baskets of chasselas.<\/p>\n\n\n\n<p>Even though chasselas is rare today (30&nbsp;hectars, 74&nbsp;acres), it still produces beautiful and tasty<br> golden grapes.&nbsp;<\/p>\n\n\n\n<p>Chasselas yields a straightforward and refreshing wine with a floral and fruity aroma. The first step, settling  of the must, allows the grape juice to clarify by sedimentation.<br>Alcoholic <span style=\"color:#000\" class=\"color\">fermentation<\/span> starts as yeast turns sugar into alcohol.<\/p>\n\n\n\n<p>After fermentation (two to four weeks on average), the lees gradually descend to the bottom of the vat. This choice bears a symbolic connotation since \u00ab&nbsp;vin-cent&nbsp;\u00bb can be extrapolated to \u00ab&nbsp;vin-sang&nbsp;\u00bb (wine-blood) and refer to the sacrifice during which wine is turned into Christ\u2019s blood.&nbsp;<\/p>\n\n\n\n<p>Originally Saint-Vincent brotherhoods were mutual assistance societies.
